Sweet Potato Cake with Praline Glaze
Ingredients
- 2 cups mashed sweet potatoes
- 2 ¾ cups flour
- 2 t. ground cinnamon
- 1 ¼ t. ground ginger
- 1 t. baking powder
- 1 t. baking soda
- ½ t salt
- 2 cups sugar
- 1 cup vegetable oil
- 4 large eggs
- 1 t. vanilla extract
- For the Icing:
- 1 cup powdered sugar
- ¾ cup packed dark brown sugar
- ½ cup whipping cream
- ¼ cup browned butter
- ¼ t vanilla
Instructions
- Preparation:
- Preheat oven to 160 degrees.
- Thoroughly grease a 12 cup Bundt pan.
- In a medium bowl combine the flour, baking soda, baking powder, cinnamon, and salt.
- In a large mixing bowl combine the sweet potatoes, oil, and sugar.
- Beat until smooth.
- Add eggs two at a time, beating well between each addition.
- Add the flour mixture and beat until just blended.
- Add the vanilla and mix to incorporate.
- Transfer the batter to the Bundt pan.
- Bake for 1 hour and 5 minutes or until a cake tester comes out mostly clean.
- Cool the cake in the pan for about 15 minutes, then invert onto a cake platter.
