Sweet Potato Cake with Praline Glaze

Ingredients

  • 2 cups mashed sweet potatoes
  • 2 ¾ cups flour
  • 2 t. ground cinnamon
  • 1 ¼ t. ground ginger
  • 1 t. baking powder
  • 1 t. baking soda
  • ½ t salt
  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 t. vanilla extract
  • For the Icing:
  • 1 cup powdered sugar
  • ¾ cup packed dark brown sugar
  • ½ cup whipping cream
  • ¼ cup browned butter
  • ¼ t vanilla

Instructions

  • Preparation:
  • Preheat oven to 160 degrees.
  • Thoroughly grease a 12 cup Bundt pan.
  • In a medium bowl combine the flour, baking soda, baking powder, cinnamon, and salt.
  • In a large mixing bowl combine the sweet potatoes, oil, and sugar.
  • Beat until smooth.
  • Add eggs two at a time, beating well between each addition.
  • Add the flour mixture and beat until just blended.
  • Add the vanilla and mix to incorporate.
  • Transfer the batter to the Bundt pan.
  • Bake for 1 hour and 5 minutes or until a cake tester comes out mostly clean.
  • Cool the cake in the pan for about 15 minutes, then invert onto a cake platter.
